Belgian Waffles

These light and fluffy waffles are a delicious breakfast dish and will not disappoint!

Ingredients

1 cup of flour
1 teaspoon baking powder
1/4 teaspoon salt
2 large eggs (separate the yolks and whites)
1 tablespoon sugar
1/4 teaspoon vanilla extract
2 tablespoons unsalted butter, melted
1 cup of milk

Instructions

1. Sift together flour, baking powder and salt – set aside
2. In a second bowl, beat together egg yolks and sugar until sugar is dissolved and the eggs are a pale yellow
3. Add vanilla, butter, and milk to the egg mixture and whisk together
4. Combine with the flour mixture and whisk until just blended
5. In a third bowl or the bowl you just discarded, beat egg whites with an electric mixer until they are light and fluffy (looks like foam)
6. Fold egg whites into batter
7. Preheat the waffle maker
8. Spray waffle maker with a thick even coat of cooking spray
9. Pour batter into the center of the waffle maker according to the waffle maker instructions and cook for 2-3 minutes
10. Serve warm with your choice of toppings

Oven Roasted Vegetables

This vegetable mix has great flavor and requires hardly any prep work. Be creative and add other vegetables that you like to personalize the dish.

Ingredients

6 ounces of petite carrots
1 sweet onion
1 red or yellow pepper
1 green pepper or 6 ounces of green beans
2 Tablespoons freshly minced garlic cloves
1/4 cup olive oil
1 1/2 teaspoon dry italian dressing
1/4 teaspoon salt
1/4 teaspoon pepper
2 Tablespoons balsamic vinegar

Instructions

1. Preheat oven to 475 degrees
2. Slice onion and peppers
3. Place all ingredients in a large bowl and toss to coat vegetables
4. Spray 13″ x 10″ pan with cooking spray
5. Place vegetables in pan spreading them out evenly
6. Cook vegetables for 45 minutes at 475 degrees stirring every 15 minutes

Homemade Pizza Crust

When you are feeling ambitious this is a great afternoon or evening recipe to make your own pizza!

Ingredients

1 package active dry yeast (or the equivalent from a jar of yeast – conversion printed on label)
1 cup warm water
1/2 teaspoon salt
2 teaspoons olive oil
3 1/2 cups of flour
1 tablespoon cornmeal
6 ounces pizza sauce
2 cups of mozzarella cheese
Other desired toppings

Instructions

1. In your mixing bowl dissolve yeast in warm water
2. Add salt, olive oil, and 2 1/2 cups of flour
3. Using a dough hook, mix ingredients on speed two for one minute
If you don’t have a dough hook you can knead the dough by hand, it just takes a little longer
4. Continuing on speed two, add remaining flour 1/2 cup at a time
5. Knead until dough is mixed and holds together well
6. Grease a second bowl
7. Grease the top of the dough
8. Cover and let rise in a warm place for 1 to 1 1/2 hours
9. Preheat oven to 450 degrees F
10. Brush a 13″-14″ pizza stone with oil
11. Sprinkle with cornmeal
12. Press dough out to the edges of the stone and form ridge to hold in the toppings
13. Add toppings as desired
14. Bake for 15-20 minutes
15. Let cool for several minutes before slicing

Ramen Noodle Salad

Ready in minutes and always delicious this salad is great with any meal. Not only is it tasty, but easily made in advance!

Ingredients

1 head Nappa Cabbage (or lettuce) chopped
1/4 cup butter
1/4 cup sunflower seeds
1/4 cup slivered almonds
1 package of Ramen noodles crumbled
1/2 cup olive oil
1/4 cup white sugar
1 teaspoon soy sauce
1/4 cup white vinegar

Instructions

1. In a fry pan saute butter, sunflower seeds, slivered almonds, and crushed Ramen noodles until brown (6-10minutes)
2. Once brown drain on paper towels
3. To make dressing combine oil, sugar, soy sauce, and vinegar
4. Shake until well mixed
5. Store dressing and noodle mix separately until served
6. Toss cabbage, noodle mix, and dressing to serve

Chocolate Covered Strawberries

Store bought elegance of a chocolate covered strawberry achieved at home in only a few minutes. Great for any occasion no matter how romantic or casual it may be. Once you start making your own chocolate covered strawberries you will want to have them on hand all the time!

Ingredients

1-2 pounds of strawberries washed and air dried
3 squares of Baker’s semi-sweet chocolate
1 square of Baker’s unsweetened chocolate

Instructions

1. In a small bowl or on a plate melt all the chocolate squares on a medium heat setting using a microwave
2. When the chocolate is soft stir the chocolate until it is smooth and well mixed
3. One at a time dip strawberries in chocolate and place on parchment paper to cool
4. Place in refrigerator uncovered until ready to serve

Red Pepper Pasta

Pasta that is ready to eat in 30 minutes or less! This recipe can also be doubled – the leftovers reheat well the next day for lunch.

Ingredients

4 ounces dried fettuccine (about 1/4 box)
2 1/4 teaspoons butter
2 1/4 teaspoons flour
1/2 cup milk
1/4 cup half and half
1/4 cup roasted red peppers (from a jar, drain excess juice if necessary)
1 garlic clove cut in half
1/4 cup parmesan + extra for topping
Salt and Pepper to taste

Instructions

1. Begin cooking fettuccine according to package instructions
2. Melt butter over medium heat
3. Slowing whisk in flour until combined
4. Slowing add the milk and half and half while continuing to whisk (helps avoid clumps)
5. Add the red peppers and garlic
6. Turn heat to low and simmer for 10 minutes
7. Pour the mixture into a blender and blend until smooth (creates a puree)
8. Return the sauce to the pan and add the Parmesan cheese, seasoning with salt and pepper
9. Simmer until pasta is ready
10. Once pasta is drained add the sauce to the fettuccine noodles and stir until combined
11. Sprinkle with Parmesan cheese and serve warm

Chewy (made from scratch) Brownies

This is my go to brownie recipe! No more using box mixes after I tried these. With a few more ingredients they as almost as quick as the pre made mixes.

Ingredients

1 2/3 cup sugar
3/4 cup baking cocoa
1 1/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup melted butter (1 1/2 salted sticks)
2 large eggs
2 tablespoons water
2 teaspoons vanilla extract
3/4 cup semi-sweet chocolate chips
Powdered sugar for sprinkling

Instructions

1. Preheat oven to 350 degrees Fahrenheit (325 if using a glass dish)
2. Grease a 9x13inch baking pan
3. Add all ingredients except chocolate chips into a mixing bowl
4. Using a rubber spatula mix ingredients together until well combined
NOTE: The batter will be thick and kind of grainy – this is ok
5. Add chocolate chips and mix in (sometimes I add a few extra)
6. Pour batter into the baking pan and spread into an even layer
NOTE: The brownies will not rise as they bake
7. Bake for 18 to 25 minutes (slightly longer for glass dish) or until a toothpick in the center comes out slightly sticky
8. Allow to cool completely in the pan before dusting with powdered sugar and serving

Green Jell-O Salad

As odd as this recipe may look it has been one of my long time favorites passed down from my Grandma. It’s simple to make and stands out in a line of dishes. It’s great when you need a semi-quick dish but don’t want to spend a lot of money on something super fancy.

Ingredients
1 package lime jell-o
1 cup of hot water
Ice cubes or 1 cup of cold water (I use ice)
20 oz of sliced pineapple cut into chunks
12 oz cottage cheese (medium to large curd)
Dash of salt

Instructions
1. Stir jell-o with hot water until dissolved
2. Add ice cubes or cold water and stir until chilled
3. Remove extra ice cubes if necessary
4. Drain pineapple and add to the jell-o
5. Make sure there is no extra liquid in the cottage cheese (drain off if necessary) add to mixture
6. Add a dash of salt
7. Put or keep in bowl, put in the refrigerator until it sets up
NOTE: The Jell-O will not chill well in a metal bowl

Buffalo Chicken Dip

Quick, easy, and great to share at an event! Always a crowd pleaser.

Ingredients

2 cans of chicken (5 oz each) found next to the tuna
8 ounces of cream cheese at room temperature (if colder cook time will take longer)
8 ounces (1 cup) of liquid ranch
6 ounces of Franks hot sauce (I usually use 1 cup because I like hot sauce!)
6 ounces cheddar cheese (loosely shredded this is about 1 cup)

Instructions

1. Mix all ingredients in a crock pot
2. Warm on high until all ingredients are combined. Stir occasionally so the bottom does not burn.
3. Serve with tortilla chips

Picnic Chicken

Summer picnics can be a lot of fun but deciding what to take can be a challenge. Do you try to take something warm and eat it quickly or take something cold? This recipe is one of my favorite! It starts cold but still taste good if it warms up a little bit.

Ingredients

2 pounds chicken parts with the skin on (I usually do 2 thighs and 4 drumsticks)
1 Tablespoon kosher salt
1 1/2 Tablespoon brown sugar
1 Tablespoon chili powder
1 Tablespoon paprika
1 teaspoon ground pepper
1/4 teaspoon cayenne

Instructions

1. Mix all spices and seasonings together
2. Using thawed chicken cut several slits in the skin, but not cutting the meat
3. Cover the chicken with seasoning, rubbing some on the inside of the slits as well. Don’t be afraid to use a lot
4. Place on a broiler pan and cover with tin foil
5. Refrigerate for 6-12 hours allowing the salt to dry out the skin which will make it crisp when served cold
6. Preheat the oven to 425 degrees
7. Bake uncovered in the middle of the oven for 15-20 minutes (meat should be about 140 degrees)
8. Increase oven temp to 500 degrees and bake 7 minutes longer until a meat thermometer reads approximately 170 degrees
9. Remove from oven and place on a cooling rack until completely cool
10. Place in storage contain and refrigerate until served

NOTE: When in a hurry I prepare the chicken the night before, cook it in the morning and put it in the refrigerator when I need to leave even if it isn’t completely cool. This recipe can also be served warm if you decide not to go on a picnic.
