Honey and Garlic Shrimp

In my mission to avoid grocery shopping for another day but still wanting to cook something delicious, fast, and easy I found this gem. I’ll admit I had my doubts since there are only a few ingredients but I was not disappointed.

Ingredients

Instant Rice, 2 servings
2 cups frozen Broccoli
1/3 cup honey
1/4 cup soy sauce
1 pound of shrimp with the tails removed
4 garlic cloves minced
2 tablespoons olive oil
1 sliced green onion (optional)

Instructions

1. Mix together honey, soy sauce, and garlic
2. In a quart size plastic bag or tupperware pour half of the honey mixture over the shrimp.
3. Refrigerate shrimp and marinade for 15 minutes to 12 hours (I did an hour and was satisfied with the flavor). Also refrigerate the remaining unused marinade.
4. When you are ready to cook, start the rice and steaming the broccoli according to the package instructions. (Each take 5-10 minutes)
5. Heat the olive oil over medium-high heat
6. When the oil is hot, place the shrimp in the pan and discard the rest of the marinade from the bag.
7. Cook shrimp for 45 seconds per side, then add the remaining marinade that had been separated
8. Cook for another 1-2 minutes until the shrimp are cooked through
9. After you’ve removed the shrimp from the pan serve with sliced green onion, rice, and broccoli.
10. For extra flavor, feel free to add any extra cooked marinade from the shrimp pan to the broccoli.
