Lemon Butter Shrimp Bake with Asparagus

If you don’t feel like spending a lot of time in the kitchen but still want a great meal, then this recipe is for you! The lemons add a fresh taste for spring or summer meals and some zing to the asparagus. What’s best, is the entire meal is ready at once in roughly 20 minutes. 

Prep Time: 5 minutes
Cook Time: 10-15 minutes

Ingredients

1/2 pound shrimp precooked (can use frozen, if they are thawed)
1-2 lemons
1/2 – 1 packet of dry italian seasoning
1 stick of salted butter (1/2 cup)
1 large handful of asparagus (thin stalks)

Instructions

  1. Preheat oven to 350 degrees 
  2. Slice lemons thinly 
  3. Line a baking sheet with aluminum foil 
  4. Melt the butter in the microwave and pour over the lemons 
  5. Toss the raw shrimp with Italian seasoning 
  6. Place shrimp on lemons
  7. Trim the asparagus and spray with cooking oil (I use my oil mister)
  8. Place the asparagus on the other half of the pan over the lemons
  9. Sprinkle entire pan with salt
  10. Bake for 10-15 minutes until shrimp is hot and asparagus is cooked
