Spicy Chili

THE BEST thing about chili is it is almost impossible to mess up. Want it to have more spice, add more spice. Want it to have more or different meat/protein, change it up. I think every time I make this recipe it changes a little but I’m never disappointed! I tend to add more or less seasonings and even add turkey or venison from time to time. Here’s my favorite “base” chili recipe.

Ingredients

1 pound ground beef
1 pound Italian sausage (as mild or hot as you like)
2 cans stewed tomatoes (14.5 oz each)
1/2 cup chopped onion (I use vidalia onions)
1 small green pepper chopped
1 can tomato paste (6 oz)
1 jalapeno chopped
1 1/2 tablespoons chili powder
1 1/2 tablespoons white vinegar
1 tablespoon spicy brown mustard
1 tablespoon dried oregano
1 garlic cloves, minced
1/2 teaspoons ground cumin
1 teaspoons hot pepper sauce
3/4 teaspoon salt
3/4 teaspoon paprika

My toppings of choice: Sour Cream, Fresh Grated Cheese, and Fritos
Other ideas: Saltines or Doritos

Instructions

1. In a large pan (I use my dutch oven), brown the beef and sausage
2. Drain off grease and leave in pan
3. Add all remaining ingredients and bring to a boil
4. Reduce heat and simmer uncovered for 30 minutes, stirring frequently.
