Oven Roasted Vegetables

This vegetable mix has great flavor and requires hardly any prep work. Be creative and add other vegetables that you like to personalize the dish.

Ingredients

6 ounces of petite carrots
1 sweet onion
1 red or yellow pepper
1 green pepper or 6 ounces of green beans
2 Tablespoons freshly minced garlic cloves
1/4 cup olive oil
1 1/2 teaspoon dry italian dressing
1/4 teaspoon salt
1/4 teaspoon pepper
2 Tablespoons balsamic vinegar

Instructions

1. Preheat oven to 475 degrees
2. Slice onion and peppers
3. Place all ingredients in a large bowl and toss to coat vegetables
4. Spray 13″ x 10″ pan with cooking spray
5. Place vegetables in pan spreading them out evenly
6. Cook vegetables for 45 minutes at 475 degrees stirring every 15 minutes
