Belgian Waffles

These light and fluffy waffles are a delicious breakfast dish and will not disappoint!

Ingredients

1 cup of flour
1 teaspoon baking powder
1/4 teaspoon salt
2 large eggs (separate the yolks and whites)
1 tablespoon sugar
1/4 teaspoon vanilla extract
2 tablespoons unsalted butter, melted
1 cup of milk

Instructions

1. Sift together flour, baking powder and salt – set aside
2. In a second bowl, beat together egg yolks and sugar until sugar is dissolved and the eggs are a pale yellow
3. Add vanilla, butter, and milk to the egg mixture and whisk together
4. Combine with the flour mixture and whisk until just blended
5. In a third bowl or the bowl you just discarded, beat egg whites with an electric mixer until they are light and fluffy (looks like foam)
6. Fold egg whites into batter
7. Preheat the waffle maker
8. Spray waffle maker with a thick even coat of cooking spray
9. Pour batter into the center of the waffle maker according to the waffle maker instructions and cook for 2-3 minutes
10. Serve warm with your choice of toppings
