Scotcheroo (Rice Krispie) Roll Ups

Ingredients

Chocolate filling
3/4 cup butterscotch chips
scant 1/4 cup peanut butter
3/4 cup chocolate chips
Rice Krispies
6 cups rice krispies
3/4 cup sugar
3/4 cup karo syrup
3/4 cup peanut butter

Instructions

1. Grease a large 10 x 15” pan, line with heavy duty aluminum foil, then grease the foil.
2. In a large, greased bowl add 6 c Rice Krispies.
3. In med pan: ¾ c sugar, ¾ c karo syrup. Cook on med just til it starts to bubble.
4. At the same time as the sugar and karo syrup are melting start the chocolate filling. In microwave bowl add ¾ c butterscotch chips, scant ¼ c peanut butter and microwave on low til chips start to soften. (I do power level 3, 55 seconds at a time and stir twice.
5. Then add ¾ c chocolate chips and melt with the butterscotch chips
6. When the sugar and karo syrup are bubbly remove from heat, add ¾ c peanut butter, stir til blended.
7. Pour the sugar peanut butter mix over the Rice Krispies.
8. Press the Rice Krispies firmly into the pan.
9. Top with melted chocolate & butterscotch chips and peanut butter mixture, spread. Don’t go overboard, you may have extra. If you add to much chocolate it will seep out the end when you roll.
10. Cut roll in ½ lengthwise, roll up two rolls like jelly roll pressing very firmly together.
11. Cool, slice like jelly roll. Enjoy!
